Description

Quick, easy, and packed with flavor — this healthy 5-minute avocado toast is the perfect breakfast or snack. Topped with creamy mashed avocado and optionally finished with a fried or poached egg for extra protein.


Ingredients

  • 1 avocado, peeled and seeded
  • 2 tablespoons chopped cilantro
  • Juice of 1/2 lime
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt & pepper to taste
  • 2 slices whole grain bread (or bread of choice)
  • 2 eggs (fried, scrambled, or poached, optional)

Instructions

  1. Toast 2 slices of whole grain bread in a toaster until golden and crispy.
  2. In a small bowl, mash the avocado with chopped cilantro, lime juice, salt, and pepper.
  3. Spread half the avocado mixture on each slice of toasted bread.
  4. Top with fried, scrambled, or poached egg if desired.
