Description

Juicy buffalo chicken meatballs packed with flavor, perfect for parties, game days, or a spicy dinner twist.

Ingredients

Scale
  • 1 pound ground chicken or turkey
  • ¾ cup panko breadcrumbs
  • 1 large egg
  • ¼ cup Frank’s Buffalo Wing Sauce (or preferred hot sauce)
  • 2 cloves garlic (minced)
  • 1 packet dry ranch seasoning
  • 35 green onions (finely chopped (set some aside for garnish))
  • ⅓ cup celery (finely chopped (set some aside for garnish))
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Ranch or blue cheese for dipping/drizzling

Instructions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper or spray with non-stick spray.
  2. Mix ground chicken, breadcrumbs, egg, buffalo sauce, minced garlic, ranch seasoning, onion powder, pepper, and chopped celery and green onions in a large bowl until well combined.
  3. Form into tablespoon-sized meatballs using wet hands and place them on the prepared baking sheet.
  4. Bake for 18-20 minutes. For a crispier top, broil for 1-2 minutes at the end.
  5. Brush with extra buffalo sauce for added flavor, if desired.
  6. Garnish with reserved green onions and celery. Drizzle ranch or blue cheese on top or serve on the side.
  7. Serve immediately. Makes about 20-24 meatballs, perfect for appetizers or a fun dinner!

Notes

Use gloves or wet hands when forming meatballs to avoid sticking. Great for meal prep or freezing!
