Description
Deliciously cheesy Lasagna Roll Ups filled with rich beef sauce, creamy ricotta, and topped with melty mozzarella for the perfect comfort dinner.

- 12 lasagna noodles (*cooked to package instructions)
- 16 oz ground beef (85% lean)
- 24 oz marinara sauce
- 1/2 cup diced onion
- 3 garlic cloves (minced)
- 1 tsp sea salt (or to taste for red sauce)
- 1/2 tsp black pepper (or to taste)
- 1/2 tsp dried oregano
- 15 oz ricotta cheese
- 1 large egg
- 1/4 cup parmesan cheese (shredded)
- 3 cups mozzarella cheese (shredded, divided)
- 1/4 cup parsley (chopped, plus more to garnish)
Instructions
- Preheat oven to 375˚F. Cook noodles in a large pot of salted water according to package instructions for al dente (don’t overcook). Drain and fill pot with cold water to stop cooking and keep noodles from sticking.
- In a deep pan over medium-high heat, cook ground beef until no longer pink, breaking it up as it cooks. Add onion and cook until softened (3 minutes). Add garlic, salt, pepper, and oregano and sauté 1 minute. Add marinara sauce, bring to a simmer, then remove from heat. Spread 1/2 cup of meat sauce over the bottom of a casserole dish.
- In a large bowl, mix ricotta, egg, Parmesan, 1 1/2 cups mozzarella, and parsley.
- Lay noodles flat. Spread 1/4 cup of cheese mixture over each noodle, then add a heaping tablespoon of meat sauce down the center. Roll up and place seam-side down in the prepared dish.
- Spread remaining sauce over roll-ups and top with remaining mozzarella. Cover with foil (don’t let it touch the cheese).
- Bake covered at 375˚F for 40 minutes, then uncover and broil 2–3 minutes until cheese is golden. Garnish with parsley and serve.
Notes
Perfect make-ahead dinner! Assemble ahead and bake before serving. Add red pepper flakes for a little heat if desired.
