Description

Crisp, fresh, and herb-packed—this Cucumber Radish Salad is the perfect side for warm days. Tossed in a tangy vinaigrette and topped with creamy goat cheese, it’s simple yet vibrant.


Ingredients

  • 1/4 cup extra-virgin olive oil
  • 1 tablespoon minced shallots
  • 2 teaspoons white wine vinegar
  • 2 teaspoons honey
  • 1/4 teaspoon sumac
  • 1/2 teaspoon kosher salt
  • 1 large English cucumber (thinly sliced)
  • 12 radishes (thinly sliced)
  • 3 stalks of celery (thinly sliced)
  • 1/4 cup minced dill
  • 1/4 cup minced chives
  • 3 tablespoons chopped mint
  • 4 ounces goat cheese (chèvre)

Instructions

  1. Make the dressing: In a salad bowl, combine olive oil, shallots, white wine vinegar, honey, sumac and kosher salt.
  2. Make the salad: Combine cucumber, radishes, celery, dill, chives, and mint in the bowl with the dressing. Toss to combine. Top with crumbled goat cheese, freshly cracked pepper, and a sprinkle of salt. Serve immediately.

Notes

For best results, slice the vegetables as thinly as possible and serve immediately to preserve crunch.
