Description
A refreshing iced blueberry latte made with homemade blueberry simple syrup, creamy oat milk, and rich espresso.
Ingredients

- 2 cups Fresh Blueberries (or frozen)
- 1 cup Water
- ½ cup Organic Cane Sugar
- 1–2 tablespoons Blueberry Simple Syrup (more to preference)
- Ice Cubes
- ½ cup Oat Milk (or other plant-based milk)
- Double Shot of Espresso
Instructions
- Combine the blueberries, raw cane sugar, and water in a pan, and stir to mix everything together.
- Bring the mixture to a slight boil then immediately reduce to a simmer over medium heat for 5 minutes. Then, use a potato masher or back of spoon to mash the blueberries. Continue to simmer for 10 minutes.
- Place a fine-mesh strainer over a bowl or measuring cup, then pour the syrup through it. Allow the syrup to cool to room temperature.
- Add 1-2 tablespoons of blueberry simple syrup to the bottom of a tall glass.
- Fill with ice and pour in the oat milk.
- Brew a double shot of espresso and pour over the oat milk. Stir and taste to adjust sweetness and flavor.
- If making a hot blueberry latte, froth and steam the milk and omit the ice.
Notes
For a sweeter drink, add extra blueberry syrup or drizzle some on top for garnish.
