Description

A refreshing iced blueberry latte made with homemade blueberry simple syrup, creamy oat milk, and rich espresso.


Ingredients

Scale
  • 2 cups Fresh Blueberries (or frozen)
  • 1 cup Water
  • ½ cup Organic Cane Sugar
  • 12 tablespoons Blueberry Simple Syrup (more to preference)
  • Ice Cubes
  • ½ cup Oat Milk (or other plant-based milk)
  • Double Shot of Espresso

Instructions

  1. Combine the blueberries, raw cane sugar, and water in a pan, and stir to mix everything together.
  2. Bring the mixture to a slight boil then immediately reduce to a simmer over medium heat for 5 minutes. Then, use a potato masher or back of spoon to mash the blueberries. Continue to simmer for 10 minutes.
  3. Place a fine-mesh strainer over a bowl or measuring cup, then pour the syrup through it. Allow the syrup to cool to room temperature.
  4. Add 1-2 tablespoons of blueberry simple syrup to the bottom of a tall glass.
  5. Fill with ice and pour in the oat milk.
  6. Brew a double shot of espresso and pour over the oat milk. Stir and taste to adjust sweetness and flavor.
  7. If making a hot blueberry latte, froth and steam the milk and omit the ice.

Notes

For a sweeter drink, add extra blueberry syrup or drizzle some on top for garnish.
