Why Youโ€™ll Love This Baked Ziti Recipe

Trust me when I say this easy baked ziti will become your go-to comfort food. First, itโ€™s incredibly forgiving perfect for both new cooks and seasoned kitchen veterans. The combination of Italian sausage and ground beef creates layers of flavor thatโ€™ll have your family asking for the recipe.

What makes this dish truly special is how it brings everyone to the table. Iโ€™ve watched kids who claim they โ€œdonโ€™t like pastaโ€ clean their plates, and seen grandparents smile as they remember their own family traditions. Itโ€™s hearty pasta casserole cooking at its finest โ€“ simple ingredients transformed into something extraordinary.

Most importantly, this recipe feeds a crowd without breaking the bank. You can make this ahead of time, which means less stress when youโ€™re hosting family gatherings or bringing comfort to a friend in need.

What Youโ€™ll Need

Hereโ€™s what weโ€™ll be working with today โ€“ and donโ€™t worry if you need to make a few substitutions. Cook with feeling, not just timing, remember?

  • Olive oil โ€“ I always reach for good quality extra virgin. Itโ€™s the foundation of flavor here.
  • Large onion, diced โ€“ The sweet base that makes everything taste like home.
  • Fresh garlic, minced โ€“ Please donโ€™t use the jarred stuff if you can help it. Fresh garlic makes all the difference.
  • Italian sausage โ€“ This is where the magic happens. I prefer a mix of sweet and spicy, but use what your family loves.
  • Ground beef โ€“ Choose 80/20 for the best flavor and texture.
  • Whole tomatoes with juice โ€“ I crush these by hand for that rustic, homemade feel.
  • Tomato sauce or marinara โ€“ Your favorite brand works perfectly here.
  • Italian seasoning and red pepper flakes โ€“ The aromatic heart of this dish.
  • Ziti or mostaccioli pasta โ€“ These tube shapes hold onto the sauce beautifully.
  • Whole milk ricotta cheese โ€“ Donโ€™t skimp here โ€“ the creaminess is everything.
  • Fresh mozzarella, grated โ€“ I know itโ€™s extra work, but pre-shredded just doesnโ€™t melt the same way.
  • Parmesan cheese โ€“ Freshly grated if possible, for that sharp, nutty finish.
  • One egg โ€“ This helps bind our cheese mixture together.
  • Fresh parsley โ€“ The bright, fresh finish that makes everything pop.

Letโ€™s Make It Together

Take a deep breath โ€“ weโ€™re about to fill your kitchen with the most incredible aromas. Hereโ€™s how weโ€™ll build this cheesy baked ziti step by step:

  1. Start your sauce base by heating olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautรฉing until theyโ€™re soft and fragrant โ€“ about 5 minutes. Youโ€™ll know itโ€™s ready when your kitchen starts smelling like an Italian grandmotherโ€™s house.
  2. Brown the meats by adding both the Italian sausage and ground beef to your aromatic base. Cook until beautifully browned, breaking up the meat as you go. Drain most of the fat, but leave a little behind for flavor and moisture โ€“ trust me on this one.
  3. Build your sauce by stirring in the whole tomatoes (crush them with your hands first), tomato sauce, Italian seasoning, red pepper flakes, salt, and pepper. Let this simmer for 25-30 minutes until itโ€™s rich and thick. Remove 3-4 cups of sauce to cool โ€“ weโ€™ll need this later.
  4. Preheat your oven to 375ยฐF while you prepare the cheese mixture.
  5. Create the cheese magic by combining ricotta, 2 cups of mozzarella, parmesan, egg, salt, and pepper in a large bowl. Stir just a couple times โ€“ donโ€™t overmix. Those beautiful lumps of cheese are exactly what we want.
  6. Assemble with love by draining your cooked pasta and rinsing with cool water. Toss the pasta with the cheese mixture (keeping those lovely lumps), then fold in the cooled meat sauce. Layer half in your casserole dish, top with sauce and cheese, then repeat. Bake for about 20 minutes until itโ€™s bubbling and golden.

Serving Suggestions

This Italian pasta bake is absolutely perfect on its own, but I love serving it with a simple Caesar salad and some crusty garlic bread. During the holidays, Iโ€™ll add a side of roasted vegetables โ€“ the colors look beautiful together on the table.

For casual family dinners, serve it straight from the casserole dish with a big wooden spoon. Thereโ€™s something so welcoming about that approach. If youโ€™re entertaining, individual ramekins make elegant presentations while keeping that homestyle comfort.

Donโ€™t forget to sprinkle fresh parsley over each serving it adds such a lovely pop of color and fresh flavor that brightens the whole dish.

Baked Ziti

Make It Your Own

One of the beautiful things about this recipe is how easily it adapts to your familyโ€™s preferences:

  • Vegetarian version โ€“ Skip the meat and add roasted eggplant, zucchini, and bell peppers instead
  • Lighter option โ€“ Use part-skim ricotta and reduce the mozzarella slightly
  • Spice lovers โ€“ Add extra red pepper flakes or use hot Italian sausage
  • Kid-friendly โ€“ Omit the red pepper flakes and use all sweet Italian sausage

Kitchen Tips & Tricks

Hereโ€™s what Iโ€™ve learned from years of making this family-style baked ziti : Donโ€™t overcook your pasta initially โ€“ itโ€™ll finish cooking in the oven. Iโ€™ve made the mistake of perfectly al dente pasta that turned mushy after baking, and nobody wants that.

Another tip that changed everything for me was letting that meat sauce cool before mixing it with the cheese. Hot sauce can make your cheese mixture too runny, and we want those beautiful, distinct layers of flavor.

Most importantly, let it rest for those 5 minutes after baking. I know itโ€™s tempting to dive right in, but this resting time helps everything set up perfectly for serving.

Storage & Make-Ahead Tips

This make-ahead pasta casserole is a lifesaver for busy weeks. You can assemble everything up to 24 hours ahead and keep it covered in the refrigerator. Just add an extra 10 minutes to the baking time if youโ€™re starting from cold.

Leftovers keep beautifully for up to 4 days in the fridge, and individual portions reheat perfectly in the microwave. For freezing, wrap tightly and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.

Frequently Asked Questions

Can I use different pasta shapes?

Absolutely! Penne, rigatoni, or even shells work wonderfully. Just choose something with ridges or tubes thatโ€™ll hold onto that delicious sauce.

What if I donโ€™t have ricotta?

You can substitute with cottage cheese, though the texture will be slightly different. Some families actually prefer it this way!

How do I know when itโ€™s done?

Look for bubbling around the edges and a golden top. The internal temperature should reach 165ยฐF if you want to be precise.

Can I make individual portions?

Yes! Use ramekins or small baking dishes and reduce the cooking time to about 15 minutes.

A classic baked ziti loaded with Italian sausage, beef, ricotta, mozzarella, and a rich tomato sauce, baked to bubbly perfection.

Ingredients

Scale
  • 2 tbsp. olive oil
  • 1 whole large onion, diced
  • 3 cloves garlic, minced
  • 1 lb. Italian sausage
  • 1 lb. ground beef
  • 1 (28-oz.) can whole tomatoes, with juice
  • 2 (14.5-oz.) cans tomato sauce or marinara sauce
  • 2 tsp. Italian seasoning
  • 1/2 tsp. red pepper flakes
  • Kosher salt, to taste
  • Ground black pepper, to taste
  • 16 oz. ziti or mostaccioli, cooked until not quite al dente
  • 15 oz. whole milk ricotta cheese
  • 1 1/2 lb. mozzarella cheese, grated and divided
  • 1/2 c. grated parmesan cheese
  • 1 egg
  • Freshly chopped parsley

Instructions

  1. Heat the olive oil in a pot over medium heat. Add the onion and garlic, and sautรฉ for several minutes, or until starting to soften. Add the Italian sausage and ground beef and cook until browned. Drain off the fat, leaving a bit behind for flavor and moisture.
  2. Add the tomatoes with juice, tomato sauce, Italian seasoning, red pepper flakes, salt, and pepper. Stir and simmer for 25 to 30 minutes. After that time, remove 3 to 4 cups of the sauce to a bowl to cool down.
  3. Preheat the oven to 375ยฐF.
  4. To a separate bowl, add the ricotta cheese, 2 cups of grated mozzarella, parmesan, egg, salt, and pepper. Stir together just a couple of times (do not mix completely).
  5. Drain the pasta and rinse under cool water to stop the cooking and cool it down. Pour the cooked pasta into the bowl with the cheese mixture and toss to slightly combine (there should still be large lumps). Add the cooled meat sauce and toss to combine.
  6. Add half of the coated pasta to a large casserole dish. Spoon half of the remaining sauce over the top, then top with half of the remaining mozzarella cheese. Repeat with another layer of the coated pasta, sauce, and mozzarella. Bake until bubbling, about 20 minutes. Remove from oven and let stand for 5 minutes before serving. Sprinkle chopped parsley over the pasta before serving!

Notes

Let the baked ziti rest before serving for clean slices and enhanced flavor.
