Description

Creamy, nutty, and naturally sweet—these Pistachio Overnight Oats make the perfect grab-and-go breakfast with a touch of elegance.


Ingredients

Scale
  • ½ cup non-dairy milk
  • 1 tbsp pistachio butter
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • ½ cup quick oats
  • 1 tsp chia seeds
  • non-dairy yogurt (for topping)
  • raspberries (for topping)
  • chopped pistachios (for topping)

Instructions

  1. In a jar or small bowl, whisk together the non-dairy milk, pistachio butter, maple syrup, and vanilla extract until the pistachio butter dissolves. Mix in the oats and chia seeds. Optional: stir in 1/4 tsp matcha powder for color.
  2. Cover and refrigerate overnight or for at least 4 hours.
  3. The next morning, add your favorite toppings and enjoy!

Notes

Store in an airtight jar for up to 3 days. Great for meal prep!
