Easy Lasagna Roll Ups

The magic of cooking hits differently when you realize a beloved family Lasagna Roll Ups can evolve into something uniquely yours. I still remember staring down a pile of lasagna roll-up ingredients one quiet evening, dreading the idea of assembling that heavy, layered pan. My grandmother’s lasagna was pure legend but let’s be honest, sometimes you crave those same comforting flavors without the marathon prep.

That’s how these cozy little rolls came to life. Each one is packed with that familiar cheesy, saucy goodness, but baked into perfectly portioned spirals that cook evenly every time. It’s simple, it’s soulful, and your family will never guess you took the easy route.

This recipe reminds me that keeping tradition alive doesn’t mean making things complicated. So, tie on that apron let’s cook.

Why You’ll Love This Easy Lasagna Roll Ups Recipe

These individual lasagna rolls solve every problem I’ve ever had with traditional lasagna. First, they portion themselves – no more guessing at serving sizes or dealing with that first messy slice that falls apart. Each person gets their own perfect spiral of pasta, cheese, and meat sauce.

Most importantly, they’re so much more approachable than layered lasagna. You can make this – I promise. There’s no precise layering, no worrying about whether your noodles will hold up, and definitely no waiting for that massive pan to cool before cutting.

Because each roll cooks individually, they heat through faster and more evenly. Plus, they freeze beautifully for those nights when you need comfort food but don’t have the energy to start from scratch.

What You’ll Need

The beauty of this lasagna roll ups recipe lies in its simplicity. I always reach for ingredients that feel familiar and comforting:

  • Lasagna noodles – These wide, flat noodles are perfect for rolling. Cook them just until al dente because they’ll finish cooking in the oven
  • Ground beef – I prefer 85% lean for the right balance of flavor and texture
  • Marinara sauce – Your favorite jarred sauce works beautifully here
  • Yellow onion and garlic – The aromatic foundation that makes everything smell like home
  • Ricotta cheese – This creates that creamy, dreamy filling we all crave
  • Mozzarella cheese – Use the good stuff if you can – it melts better and tastes richer
  • Parmesan cheese – A little goes a long way for that sharp, nutty flavor
  • Fresh parsley – Don’t skip this – it brightens everything up
  • One egg – This helps bind the cheese mixture together
  • Basic seasonings – Salt, pepper, and oregano are all you need

Let’s Make It Together

Cook with feeling, not just timing. Here’s how we’ll create these beautiful Easy Lasagna Roll Ups bundles:

  1. Prepare your noodles – Preheat your oven to 375°F. Cook those lasagna noodles in well-salted water until just al dente. Don’t worry if they seem a little firm – they’ll finish cooking perfectly in the oven.
  2. Build the meat sauce – In your favorite deep pan, brown that ground beef until it’s no longer pink. Add the diced onion and let it soften for about three minutes. Toss in the minced garlic with your seasonings and sauté for another minute until fragrant.
  3. Create the cheese mixture – In a large bowl, gently combine ricotta, egg, Parmesan, half the mozzarella, and chopped parsley. This mixture should feel rich and creamy.
  4. Roll with care – Lay your cooked noodles on a large baking sheet. Spread about 1/4 cup of cheese mixture over each noodle, then add a stripe of meat sauce down the center. Roll them up gently but firmly.
  5. Assemble and bake – Spread remaining meat sauce over the bottom of your casserole dish, nestle in your rolls, and top with remaining mozzarella. Cover with foil and bake for 40 minutes, then broil briefly until golden.

Serving Suggestions

These lasagna roll ups are beautiful enough for company but cozy enough for Tuesday night dinner. I love serving them with a simple Caesar salad and some crusty bread for sopping up any extra sauce.

For special occasions, try arranging them on individual plates with a drizzle of extra marinara and a sprinkle of fresh basil. They’re also perfect for potluck dinners because they travel well and look so impressive.

During summer months, pair them with a fresh caprese salad. In winter, serve alongside roasted vegetables or a warm soup for the ultimate comfort meal.

Make It Your Own

This easy lasagna roll ups recipe loves adaptation. Try these variations that have worked beautifully in my kitchen:

  • Vegetarian version – Replace the ground beef with sautéed mushrooms, spinach, and diced bell peppers
  • White sauce variation – Swap marinara for a creamy alfredo sauce and add cooked chicken
  • Mexican twist – Use taco seasoning, pepper jack cheese, and salsa instead of marinara
  • Make-ahead option – Assemble completely, cover tightly, and refrigerate up to two days before baking

Kitchen Tips & Tricks

Don’t worry if your first few rolls look a little wonky – mine certainly did! The key is not overfilling them. I learned this the hard way when cheese mixture started oozing everywhere.

Always cook your noodles in plenty of salted water, and don’t forget that cold water bath afterward. This stops the cooking process and prevents them from sticking together while you work.

If your casserole dish is shallow, use toothpicks to keep the foil from touching the cheese. Nobody wants foil stuck to their beautiful golden top!

Lasagna Roll Ups : Storage & Make-Ahead Tips

These individual lasagna portions freeze wonderfully for up to three months. I like to wrap them individually after they’re completely cooled, then store in freezer bags.

For reheating, thaw overnight in the refrigerator, then warm in a 350°F oven until heated through. You can also reheat individual portions in the microwave, though the oven gives better results.

Leftover rolls keep in the refrigerator for up to four days and actually taste even better the next day as the flavors meld together.

Frequently Asked Questions

Can I use no-boil lasagna noodles?

I don’t recommend it for this recipe. Regular noodles hold their shape much better when rolling, and you have more control over the texture.

Why are my rolls falling apart?

Usually this happens when the noodles are overcooked or the filling is too wet. Make sure your noodles are just al dente and drain any excess liquid from your cheese mixture.

Can I make these ahead of time?

Absolutely! Assemble completely, cover tightly, and refrigerate for up to two days. You might need to add 10-15 minutes to the baking time if they’re cold from the fridge.

How many does this recipe serve?

This makes 12 rolls, which typically serves 4-6 people depending on appetites and what you’re serving alongside.

Description

Deliciously cheesy Lasagna Roll Ups filled with rich beef sauce, creamy ricotta, and topped with melty mozzarella for the perfect comfort dinner.

Ingredients

Scale
  • 12 lasagna noodles (*cooked to package instructions)
  • 16 oz ground beef (85% lean)
  • 24 oz marinara sauce
  • 1/2 cup diced onion
  • 3 garlic cloves (minced)
  • 1 tsp sea salt (or to taste for red sauce)
  • 1/2 tsp black pepper (or to taste)
  • 1/2 tsp dried oregano
  • 15 oz ricotta cheese
  • 1 large egg
  • 1/4 cup parmesan cheese (shredded)
  • 3 cups mozzarella cheese (shredded, divided)
  • 1/4 cup parsley (chopped, plus more to garnish)

Instructions

  1. Preheat oven to 375˚F. Cook noodles in a large pot of salted water according to package instructions for al dente (don’t overcook). Drain and fill pot with cold water to stop cooking and keep noodles from sticking.
  2. In a deep pan over medium-high heat, cook ground beef until no longer pink, breaking it up as it cooks. Add onion and cook until softened (3 minutes). Add garlic, salt, pepper, and oregano and sauté 1 minute. Add marinara sauce, bring to a simmer, then remove from heat. Spread 1/2 cup of meat sauce over the bottom of a casserole dish.
  3. In a large bowl, mix ricotta, egg, Parmesan, 1 1/2 cups mozzarella, and parsley.
  4. Lay noodles flat. Spread 1/4 cup of cheese mixture over each noodle, then add a heaping tablespoon of meat sauce down the center. Roll up and place seam-side down in the prepared dish.
  5. Spread remaining sauce over roll-ups and top with remaining mozzarella. Cover with foil (don’t let it touch the cheese).
  6. Bake covered at 375˚F for 40 minutes, then uncover and broil 2–3 minutes until cheese is golden. Garnish with parsley and serve.

Notes

Perfect make-ahead dinner! Assemble ahead and bake before serving. Add red pepper flakes for a little heat if desired.
